About us:

We are a 2 rosetted restaurant and 4-star boutique hotel with 18 rooms and lodge nestled in the Cotswolds with views overlooking Stroud valley. We aim to provide unpretentious luxury with an immersive experience of the Cotswolds. We are developing a Wellness Garden.

Our motto is Eat Well, Feel Well, and Sleep Well.

Our 60 covers restaurant sources from a 35 miles radius from sustainable farms and uses its two kitchen gardens to produces immersive local dishes. In addition to breakfast and dinners we also are the main reference for afternoon teas in the area and run a seasonal fire cooking inc. pizza in the garden restaurant

The Challenge:

We are looking for someone who will enjoy the challenge supporting the head chef in strengthening the offering around our values and elevate the restaurant to a destination venue through accolades, events and social media so it would allow us to reverse the business to a “restaurant with rooms” vs a “hotel with a restaurant”.

The food will be creative but also working to target price points that reflects relax dining as well as special occasion.

Scope of Role:

Help manage the locally sourced ingredients and local suppliers and evangelize this across the business

Support the head chef with marketing content to ensure the key messages are being pushed out about the food and its provenance, including via the Instagram account for the kitchen

Manage the development and retention of the kitchen team, and their rotas especially during chef’s absence.

Lead the maintaining of GP within 70% and reduction of waste.

Help get the restaurant Good Food and Bid gourmet listing, and maybe eventually our 3rd rosette.

Help enhance existing and create other culinary events to draw in local business. You may lead on the “Back Patio” dining.

Qualifications

A track record of working in 2 rosetted or higher restaurants would be preferrable. Alternatively able to reference culinary creativity and interest in kitchen gardens and farm to fork dining

Track record of running a Kitching to high standards of hygiene and stock control.

Ability to cook across multiple styles of cuisine

Previous roles as sous chef desirable

Sous Chef Roles & Responsibilities:

  • Assist senior kitchen team with maintaining standards and mentor their development
  • Supervise and coordinate activities of staff within the kitchen environment
  • Help develop new recipes and determine how to present the food
  • Help with stock rotation and kitchen cleanliness
  • Inspect supplies, equipment, and work areas for cleanliness and functionality
  • Assist with training of the apprentice and lead by example
  • Be confident with running each section accordingly
  • Monitor and maintain all aspect of health and safety, regulation and kitchen cleanliness.
  • Lead in the absence of the Head Chef including participating in the head of department meetings

Job Types: Full-time, Permanent

Pay: From £32,000.00 per year
