The award winning Free house (Cornwall Tourism awards “Pub of the year” Gold winner 2024/2025, “Best Sunday Carvery”). Are just a few to mention. We pride ourselves using fresh Cornish ingredients we are a traditional Cornish Free house serving serving traditional pub dishes which are homemade to a high standard and generous portions for our returning customers with our very popular Sunday Carvery.

Summary

We are seeking a talented Head Chef to lead our kitchen team at The Old Inn & Restaurant. This role is pivotal in creating memorable dining experiences for our guests while ensuring the highest standards of food quality and safety. Please Note: This is NOT a live in position, transport will be essential as we are a rural Moorland Free house on Bodmin Moor. There is NO public transportation.

Responsibilities

  • Oversee all kitchen operations, lead by example ensuring high standards of food production and presentation.
  • Develop and design innovative menus / buffet menus that reflect seasonal ingredients and local flavour’s. Using local Cornish produce when available.
  • Manage kitchen staff, providing training and support to ensure a cohesive team environment.
  • Implement and maintain food safety and hygiene standards in compliance with regulations.
  • Control food costs, GP’s and manage inventory effectively to maximize profitability.
  • Collaborate with front-of-house staff to ensure seamless service delivery, maintain strong and effective relationships with front of house team, good communicator.
  • Ability to work under pressure, adhere to health and safety, food safety standards and regulations and first aid.
  • Ordering stock, stock rotation, wastage, cleanliness.
  • Hold team meetings on a regular basis to communicate standards, targets.
  • Possess a keen eye for detail.

Requirements

  • Proven experience as a Head Chef or in a similar role within the hospitality industry.
  • Strong knowledge of culinary techniques, food safety, and kitchen management.
  • Excellent leadership skills with the ability to motivate and develop a team.
  • Creative flair for menu ideas, an extensive specials boards and presentation.
  • Ability to work under pressure in a fast-paced environment.
