Job Summary
We require you to be accountable for managing kitchen staff, building a solid team with a fantastic culture. All food service operations of our establishments are kept to an exceptionally high standard. Great level of cooking skill must be paired with management.
In summary, the head chef plays an important role in the management of the entire kitchen and in keeping or maintaining quality standards, supervising food production and setting the tone for the restaurant or establishment which puts the establishment ahead of the competition. You will be required to work between all sites across West Yorkshire.
Key Roles and Responsibilities
General Functions include:
- Provide direction for daily operations of all food production facilities
- Maintain and monitors food quality standards in all areas of food production and processes as well as supplier quality control
- In charge for purchasing and replenishing food stock items from accredited suppliers
- Ensures quality control and health & hygiene standards are followed at all times
- Ensures wastages are kept to a minimum while sticking to the allotted budget
- Takes the lead in the development to the management phases of the menu
Maintenance:
- Ensure proper maintenance of food equipment
- Schedule timely repairs for food equipment or for any equipment replacement
Health and Safety:
- Ensure compliance to state and local laws regarding food service programs
- Ensure that staff is wearing personal protective equipment when working or preparing food to ensure safety of the staff and kitchen at all times
- Ensure food handlers are equipped with basic hygiene level training
- Ensure proper monitoring of purchased food item ingredients
Requirements:
- Proven knowledge of Mexican cuisine
- Keen interest in cooking and ingredients involved
- Ability to work under pressure
- Creative skill in food preparation and presentation
- Excellent time management and organisational skills
- Proven ability in leading and developing a team
- Good knowledge of PC software and Point of Sale systems
- Strong customer service attitude
- Full UK licence
Education and Experience:
- Extensive knowledge on labor and cost control
- In depth knowledge of development of cooking techniques
- Experience in menu items pricing and menu design
- Stock taking and recruitment experience
- Excellent interpersonal skills
- Food hygiene certification
