Summary of the position:
The role of Sous Chef is an integral part within the Everbright Hotels Group organisation and provides the interface between the Hotel, its staff, customers and the Everbright Hotel Group. It involves leading the kitchen team, ensuring a safe working environment for all and acting as both a role model within the hotel and on the behalf of the Everbright Hotels Group to Hotel colleagues, customers and suppliers alike.
The role and responsibilities of the Sous Chef within the Hotel lies in both the provision and delivery of the following 3 core aspects, in the operating of the agreed, documented standards to ensure a 4-star standard of service delivery:
Compliance, Leadership and Business Involvement.
- Compliance - Reporting to the Head Chef, you will lead the kitchen team in the absence of the head chef ensuring compliance with Health, Safety and other relevant legislation as specified in the Everbright Hotels Compliance Standards and the Everbright Hotel Group Policies and Procedures as supported through Shield Safety Risk Management and the Everbright Hotel Employee Handbook and Protocols (and any other support organisation that may be used from time to time).
- Leadership - You will be required to lead your department by example in the absence of the head chef by creating an environment of positive communication that will aid teamwork, flexibility and foster trust and respect. The role requires effective monitoring of the department’s performance, the effective supervision of and the facilitating of appropriate training and development to maintain effectiveness, wellbeing and motivation within the department. To positively support the hotel manager with introducing change management.
You will lead the hotel kitchen department in a manner that produces excellent teamwork between all other hotel departments with the aim of providing a seamless service to both guests, staff and suppliers in a positive and professional manner.
- Business Involvement - The role will require you to assist the Head Chef in the initiation and the preparation of the annual hotel forecast and budget. This will be agreedand signed off with the Hotel Manager and will be formally reviewed on a monthly basis.
The role will require you to work with initiative, be proactive in supporting any opportunities to maximise hotel revenues or operating efficiencies in line with the hotel budgets and forecasts. At the same time you will be required to manage all departmental operating costs effectively while maintaining agreed standards. You will need to support any initiatives to further develop the hotels product offer to enable further growth in its business from both current and new customers.

All files and materials used in conjunction with both the Hotel and the Everbright Hotel Group will remain the property of the Everbright Group at all times and can only be shared with the expressed permission of the Company.
